Ingredients
  

For the Bowl
  • 2 medium Sweet Potatoes
  • 2 cups Fresh Spinach
  • 1 cup Cooked Quinoa
  • 1 cup Chickpeas canned or cooked
  • 1 avocado sliced
  • 1 tablespoon Sesame Seeds
For the Peanut Sauce
  • 1/2 cup Peanut Butter preferably natural
  • 2 tablespoons Soy Sauce or tamari for gluten-free
  • 1 tablespoon Maple Syrup
  • 1 clove Garlic minced
  • 1 tablespoon Water to thin sauce

  • Large pot

Method
 

Bowl Assembly
  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel and cube sweet potatoes, then toss them in olive oil and sprinkle with salt.
  3. Spread sweet potatoes on the baking sheet and roast for 25 minutes until golden and tender.
  4. In a bowl, mix together the ingredients for the peanut sauce until smooth.
  5. Once sweet potatoes are roasted, assemble bowls by adding quinoa, spinach, roasted sweet potatoes, chickpeas, and avocado.
  6. Drizzle peanut sauce over the top, sprinkle with sesame seeds, and serve.
