For the Buddha Bowl Base
  • 4 cups Sweet Potatoes Diced
  • 2 cups Broccoli Chopped
  • 2 cups Shredded Cabbage
  • 1 cup Grated Carrots Optional pre-grated
  • 1 large Avocado Sliced
For the Peanut Sauce
  • 1/2 cup Peanut Butter
  • 1/4 cup Soy Sauce Or tamari for gluten-free
  • 2 tbsp Maple Syrup Or agave syrup
  • 2 tbsp Lime Juice Freshly squeezed
  • 1 tbsp Sesame Oil Or olive oil
For Garnishing
  • 1/4 cup Fresh Cilantro Chopped, optional
  • 1/4 cup Peanuts Crushed

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together peanut butter, soy sauce, maple syrup, lime juice, and sesame oil until smooth.
  3. Peel and dice the sweet potatoes and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  4. Wash and chop broccoli, shred cabbage, and grate carrots. Combine with sliced avocado in a large bowl.
  5. Layer mixed veggies in a bowl, add roasted sweet potatoes, and drizzle with peanut sauce.
  6. Garnish with fresh cilantro and crushed peanuts. Serve immediately.
