- Preheat your oven to 185°C (365°F). Gather your ingredients for the filling.
- Trim the green parts off the leeks and slice them lengthwise. Rinse under running water. Blanch the leeks for 20-30 seconds.
- In a mixing bowl, combine ground beef, rice, onion, garlic, parsley, thyme, mint leaves, salt, and pepper. Mix well.
- Lay out softened leek leaves. Place spoonful of filling at one end and roll tightly.
- Grease a baking dish with veggie oil. Arrange wrapped leeks snugly. Drizzle more oil and add water for moisture.
- Cover with foil and bake for 45 minutes. Remove foil and bake uncovered for an additional 30 minutes.
