Step‑by‑Step Instructions
  1. Preheat your oven to 185°C (365°F). Gather your ingredients for the filling.
  2. Trim the green parts off the leeks and slice them lengthwise. Rinse under running water. Blanch the leeks for 20-30 seconds.
  3. In a mixing bowl, combine ground beef, rice, onion, garlic, parsley, thyme, mint leaves, salt, and pepper. Mix well.
  4. Lay out softened leek leaves. Place spoonful of filling at one end and roll tightly.
  5. Grease a baking dish with veggie oil. Arrange wrapped leeks snugly. Drizzle more oil and add water for moisture.
  6. Cover with foil and bake for 45 minutes. Remove foil and bake uncovered for an additional 30 minutes.
