  • 2 cups Grilled or Roasted Chicken Cooked chicken breast
  • 1 cup Sweet Corn Canned, drained well
  • 1 large Cucumber Seeds removed if desired
  • 1/2 cup Red Onion Finely chopped
For the Dressing
  • 1/2 cup Mayonnaise
  • 1/4 cup Greek Yogurt Optional
  • 2 tablespoons Lime Juice Adjust to taste
  • 1/4 cup Cilantro Chopped, omit if not liked
  • 1 teaspoon Smoked Paprika Regular paprika can substitute
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Black Pepper Freshly ground preferred
For Garnish (Optional)
  • 1/4 cup Feta Cheese Crumbled

Method
 

Preparation Steps
  1. Grill or roast chicken breasts at 375°F (190°C) for about 20–25 minutes until cooked and juices run clear.
  2. If using fresh corn, grill for about 10 minutes and cut kernels off when cooled. Combine corn with diced chicken.
  3. Wash and dice cucumbers and finely chop red onion. Add to the mixing bowl with chicken and corn.
  4. In a separate bowl, whisk together mayonnaise, Greek yogurt, lime juice, cilantro, and smoked paprika until creamy. Season with salt and pepper.
  5. Pour dressing over salad mixture and gently fold until evenly coated.
  6. Serve immediately, or refrigerate for 30 minutes to allow flavors to meld. Add cucumbers just before serving if chilled.
  7. Garnish with feta cheese before serving if desired.
