Preparation Steps
- Grill or roast chicken breasts at 375°F (190°C) for about 20–25 minutes until cooked and juices run clear.
- If using fresh corn, grill for about 10 minutes and cut kernels off when cooled. Combine corn with diced chicken.
- Wash and dice cucumbers and finely chop red onion. Add to the mixing bowl with chicken and corn.
- In a separate bowl, whisk together mayonnaise, Greek yogurt, lime juice, cilantro, and smoked paprika until creamy. Season with salt and pepper.
- Pour dressing over salad mixture and gently fold until evenly coated.
- Serve immediately, or refrigerate for 30 minutes to allow flavors to meld. Add cucumbers just before serving if chilled.
- Garnish with feta cheese before serving if desired.
