Method
 

Step‑by‑Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add rigatoni pasta and cook for 10-12 minutes until al dente. Drain the pasta and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add diced steak and sear for 3-4 minutes until browned on all sides. Remove and set aside.
  3. In the same skillet, add another splash of olive oil and reduce heat to medium. Sauté diced onion and chopped bell pepper for about 5 minutes. Add minced garlic and sauté for 1 more minute.
  4. Lower the heat and pour in heavy cream. Stir in blue cheese, oregano, salt, and pepper. Simmer until sauce thickens, about 3-5 minutes.
  5. Return the seared steak to the skillet and fold in the cooked rigatoni. Transfer to a greased baking dish.
  6. Preheat oven to 375°F (190°C). Top pasta mixture with mozzarella cheese and bake for 15-20 minutes until bubbly and golden brown.
  7. Remove from oven and let cool for a few minutes. Garnish with parsley and serve hot.
