- Bring a large pot of salted water to a rolling boil. Add rigatoni pasta and cook for 10-12 minutes until al dente. Drain the pasta and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add diced steak and sear for 3-4 minutes until browned on all sides. Remove and set aside.
- In the same skillet, add another splash of olive oil and reduce heat to medium. Sauté diced onion and chopped bell pepper for about 5 minutes. Add minced garlic and sauté for 1 more minute.
- Lower the heat and pour in heavy cream. Stir in blue cheese, oregano, salt, and pepper. Simmer until sauce thickens, about 3-5 minutes.
- Return the seared steak to the skillet and fold in the cooked rigatoni. Transfer to a greased baking dish.
- Preheat oven to 375°F (190°C). Top pasta mixture with mozzarella cheese and bake for 15-20 minutes until bubbly and golden brown.
- Remove from oven and let cool for a few minutes. Garnish with parsley and serve hot.
