  • 10 ounces Frozen Chopped Spinach Thaw and squeeze out excess moisture

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Cut chicken into bite-sized pieces, season with salt, and let sit for 20 minutes.
  3. Chop the drained artichokes and squeeze moisture from the thawed spinach.
  4. Heat oil in a skillet over medium heat and cook chicken for 5-6 minutes until golden.
  5. Blend cottage cheese, garlic, salt, pepper, and onion powder in a food processor until smooth.
  6. In a baking dish, combine chicken, spinach, artichokes, cottage cheese mixture, and two-thirds of the mozzarella and Parmesan.
  7. Cover with foil and bake for 20 minutes.
  8. Remove foil, sprinkle with remaining cheeses, and broil for a few minutes until golden.
