  • 2 tablespoons Soy Sauce Use gluten-free if needed
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Gochujang Substitute with sriracha for milder heat
  • 1 tablespoon Minced Garlic Use fresh for better flavor
  • 1 teaspoon Grated Ginger Preferably fresh
  • 1 tablespoon Erythritol Keto-friendly sweetener
  • 1 teaspoon Rice Vinegar Can be swapped with apple cider vinegar
For the Salad
  • 1 Cucumber Thinly sliced
  • 1 tablespoon Chopped Green Onions
  • 1 tablespoon Sesame Seeds Optional for garnish

Instructions
  1. In a large skillet, heat over medium-high heat and add the ground beef. Cook for 5-7 minutes, breaking it apart with a spatula until fully browned.
  2. Reduce heat to medium and stir in the soy sauce, sesame oil, gochujang, minced garlic, grated ginger, erythritol, and rice vinegar. Simmer for 3-5 minutes.
  3. In a separate bowl, combine the sliced cucumber, chopped green onions, and sesame seeds. Toss gently to combine.
  4. To serve, plate the beef mixture on top of the cucumber salad and garnish with additional sesame seeds and green onions.
