Ingredients

For the Beef
  • 3 pounds Beef Chuck Roast Consider using brisket for a different flavor.
For the Potatoes
  • 2 pounds Yukon Gold Potatoes Feel free to swap in waxy potatoes for a firmer bite.
For the Sauce
  • 4 cloves Garlic Fresh garlic offers the best flavor.
  • 1/2 cup Butter Preferably Kerrygold or use plant-based butter for a dairy-free version.
  • 2 cups Broth Ensure you use gluten-free broth for dietary needs.
For Garnish
  • 1/4 cup Fresh Parsley Optional but elevates the dish's appearance.
  • 1/2 cup White Wine Optional; omit if preferred.

Equipment

  • Slow Cooker

Method

Step-by-Step Instructions
  1. Begin by searing the beef chuck roast in a hot skillet over medium-high heat for 3-4 minutes on each side until it's beautifully browned. This step enhances flavor but is optional. Once seared, transfer the beef to your slow cooker.
  2. Next, quarter the Yukon Gold potatoes and arrange them around the beef in the slow cooker.
  3. In a separate bowl, melt the butter and blend in minced garlic and your choice of broth. Stir until well combined, and then pour this mixture over the beef and potatoes in the slow cooker.
  4. Set your slow cooker to LOW for 7-8 hours or HIGH for 4-5 hours.
  5. When cooking time is up, remove the lid and spoon the aromatic mixture onto a serving platter. Drizzle additional sauce from the slow cooker over the beef and potatoes and garnish with freshly chopped parsley.

Searing the beef before slow cooking enhances its flavor significantly. Experiment with fresh herbs like thyme or rosemary for added flavor.
