  1. Begin by tossing your thinly sliced beef, chicken, or tofu in cornstarch until each piece is evenly coated. Set aside for about 5 minutes.
  2. In a large skillet or wok, heat 2 tablespoons of vegetable or canola oil over medium-high heat until shimmering, approximately 2 minutes. Cook the coated protein in batches for 3–4 minutes.
  3. In the same pan, lower the heat and sauté minced garlic and grated ginger for about 30 seconds until fragrant.
  4. In a separate bowl, whisk together soy sauce, brown sugar, and water or broth. Pour into the pan and simmer for 2–3 minutes until it thickens slightly.
