For the Rice

  • 1 tsp oregano
For the Sticky Sauce
  • 0.5 cup soy sauce Can substitute with gluten-free soy sauce.
  • 0.5 cup honey Maple syrup can be used for a vegan option.
  • 0.25 cup rice vinegar
  • 3 cloves garlic (minced) Adjust according to preference.
  • 2 tbsp sriracha Can use less for milder flavor.
  • 2 tsp sesame oil
  • 1 tsp ground ginger Can substitute with fresh ginger.
  • 2 tsp arrowroot powder (slurry) Can substitute with cornstarch.
For the Spicy Mayo
  • 0.5 cup mayo Greek yogurt can be used for a lighter version.
  • 1 tbsp sriracha Adjust to taste.
  • 2-3 tbsp water
  • sesame seeds Optional for topping.

Method
 

Cooking Steps
  1. Cook the rice according to package instructions for about 15-20 minutes, until fluffy and tender.
  2. While rice is cooking, chop broccoli into small florets and set aside for steaming or sautéing.
  3. Season the chicken with salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
  4. Heat olive oil in a large skillet over medium-high heat, add chicken, and cook for 6-8 minutes.
  5. Whisk together sticky sauce ingredients in a bowl, including a slurry made from arrowroot powder.
  6. Pour the sticky sauce over cooked chicken in the skillet, let simmer, and add slurry to thicken.
  7. Make spicy mayo by mixing mayo, sriracha, and water until smooth.
  8. Assemble bowls with rice, chicken, broccoli, and drizzle with spicy mayo, garnishing with sesame seeds.
