- Preheat your oven to 375°F (190°C) and prepare a 9-inch baking dish with non-stick spray.
- Sauté one small chopped onion in a skillet over medium heat for about 5 minutes until soft and translucent. Optional: add minced garlic for the last minute.
- In a large bowl, combine 2 cups cottage cheese, sautéed onions, 2 cups chopped fresh spinach, 4 large eggs, garlic powder, salt, and pepper, and half of the cheddar cheese. Mix well.
- Pour the mixture into the greased baking dish and spread evenly. Top with the remaining cheddar cheese.
- Bake for 30-35 minutes until the edges are set and the top is golden brown.
- Let cool for a few minutes before slicing into wedges. Serve warm or at room temperature.
