  • 1 cup Cheddar Cheese can substitute with feta or nutritional yeast.

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a 9-inch baking dish with non-stick spray.
  2. Sauté one small chopped onion in a skillet over medium heat for about 5 minutes until soft and translucent. Optional: add minced garlic for the last minute.
  3. In a large bowl, combine 2 cups cottage cheese, sautéed onions, 2 cups chopped fresh spinach, 4 large eggs, garlic powder, salt, and pepper, and half of the cheddar cheese. Mix well.
  4. Pour the mixture into the greased baking dish and spread evenly. Top with the remaining cheddar cheese.
  5. Bake for 30-35 minutes until the edges are set and the top is golden brown.
  6. Let cool for a few minutes before slicing into wedges. Serve warm or at room temperature.
