Preparation
- Prepare your slow cooker by placing it on a stable surface and setting it to the LOW setting. Layer the bottom with chicken breasts.
- Season the chicken by sprinkling cumin, salt, black pepper, chili powder, cayenne pepper, oregano, and coriander over it. Rub the spices into the meat.
- Pour chicken broth over the chicken, and add diced onion, garlic, and green chiles. Tuck in a bay leaf.
- Cook on LOW for 6–8 hours or HIGH for 3–4 hours until the chicken is fork-tender.
- Stir in beans and corn about 2 hours before serving.
- Blend a portion of the chili with cream cheese until smooth, then return it to the slow cooker.
- Shred the cooked chicken and stir it back into the chili.
- Serve the chili in bowls, garnishing with cilantro and other toppings as desired.
