- Preheat the oven to 300°F (150°C) for braising the ribs.
- Season the beef short ribs generously with sea salt and black pepper.
- Heat olive oil in a pot and sear each rib for about 4 minutes until browned.
- Sauté diced onion for about 5 minutes until translucent, then add minced garlic and cook for an additional minute.
- Combine beef stock, bourbon, maple syrup, tamari sauce, apple cider vinegar, and whole grain mustard in the pot.
- Return the seared ribs to the pot, cover, and place in the oven for 2.5 to 3 hours.
- Check tenderness after 2.5 to 3 hours; ribs should be fork-tender.
- Remove the pot from the oven, skim off excess fat, and let the ribs rest for 10 minutes before serving.
