Cooking Instructions
  1. Preheat the oven to 300°F (150°C) for braising the ribs.
  2. Season the beef short ribs generously with sea salt and black pepper.
  3. Heat olive oil in a pot and sear each rib for about 4 minutes until browned.
  4. Sauté diced onion for about 5 minutes until translucent, then add minced garlic and cook for an additional minute.
  5. Combine beef stock, bourbon, maple syrup, tamari sauce, apple cider vinegar, and whole grain mustard in the pot.
  6. Return the seared ribs to the pot, cover, and place in the oven for 2.5 to 3 hours.
  7. Check tenderness after 2.5 to 3 hours; ribs should be fork-tender.
  8. Remove the pot from the oven, skim off excess fat, and let the ribs rest for 10 minutes before serving.
