- Preheat your oven to 350°F (175°C) and lightly grease a 9.5x5 inch loaf pan.
- Sauté the finely diced onion in vegetable oil for about 10 minutes until translucent, then add minced garlic for an additional 2 minutes.
- In a mixing bowl, combine the cooled onion and garlic with one egg, gochujang, and a pinch of salt. Whisk until smooth.
- In a large bowl, mix ground pork and panko breadcrumbs, then gently fold in the binding mixture.
- Transfer the mixture to the loaf pan, pressing down gently to form an even shape. Bake for 40 minutes.
- Prepare the glaze by whisking together apricot jam, gochujang, honey, sesame oil, garlic powder, soy sauce, and rice wine vinegar.
- Spread the glaze over the meatloaf and return to the oven for an additional 10 to 15 minutes, until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 5 minutes, then slice and garnish with sesame seeds if desired.
