For the Meatloaf
  • 1 pound Ground Pork Aim for 80/20 or 85/15 fat content for moisture.
  • 1 cup Panko Bread Crumbs Regular breadcrumbs can be substituted if necessary.
  • 1 large Eggs Use room temperature eggs for better incorporation.
  • 1 medium Onion Finely diced for even distribution throughout the meatloaf.
  • 1 bunch Green Onions Slice the white and green parts separately.
  • 2 cloves Garlic Always use freshly minced garlic.
For the Glaze
  • 2 tablespoons Gochujang (Korean red chili paste) Sriracha can be used if you prefer less heat.
  • 1/4 cup Apricot Jam Other fruit jams can be used for a different dimension.
  • 2 tablespoons Honey Maple syrup is a great alternative if desired.
  • 1 tablespoon Soy Sauce Use tamari for a gluten-free option.
  • 1 tablespoon Rice Wine Vinegar Adds umami and balance.
  • 1 tablespoon Sesame Oil Omit for a lighter dish, but flavor will be different.

Method
 

Steps
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9.5x5 inch loaf pan.
  2. Sauté the finely diced onion in vegetable oil for about 10 minutes until translucent, then add minced garlic for an additional 2 minutes.
  3. In a mixing bowl, combine the cooled onion and garlic with one egg, gochujang, and a pinch of salt. Whisk until smooth.
  4. In a large bowl, mix ground pork and panko breadcrumbs, then gently fold in the binding mixture.
  5. Transfer the mixture to the loaf pan, pressing down gently to form an even shape. Bake for 40 minutes.
  6. Prepare the glaze by whisking together apricot jam, gochujang, honey, sesame oil, garlic powder, soy sauce, and rice wine vinegar.
  7. Spread the glaze over the meatloaf and return to the oven for an additional 10 to 15 minutes, until the internal temperature reaches 160°F (71°C).
  8. Let the meatloaf rest for 5 minutes, then slice and garnish with sesame seeds if desired.
