Step-by-Step Instructions
  1. In a large mixing bowl, combine 2.2 lb of ground beef or lamb with one grated onion, three grated garlic cloves, 1/4 cup of plain yogurt, and 2 tablespoons of tomato paste. Add cumin, sweet paprika, oregano, cayenne pepper, salt, and pepper to taste. Mix well until sticky and homogeneous.
  2. Divide the meat mixture into equal portions, shaping each into a ball. Place one portion between two sheets of parchment paper and use a rolling pin to flatten it into a thin sheet, about 1/2 inch thick.
  3. Once all meat sheets are prepared, take each flat sheet and roll it tightly in the parchment paper, securing it into a log shape.
  4. Preheat your oven to 400°F (200°C). Once preheated, place the tray in the oven and bake the wrapped kebabs for 20-25 minutes until lightly browned.
  5. After baking, remove the kebabs from the oven and let them rest for about 5 minutes. Unwrap each kebab and slice thinly.
