- In a large mixing bowl, combine 2.2 lb of ground beef or lamb with one grated onion, three grated garlic cloves, 1/4 cup of plain yogurt, and 2 tablespoons of tomato paste. Add cumin, sweet paprika, oregano, cayenne pepper, salt, and pepper to taste. Mix well until sticky and homogeneous.
- Divide the meat mixture into equal portions, shaping each into a ball. Place one portion between two sheets of parchment paper and use a rolling pin to flatten it into a thin sheet, about 1/2 inch thick.
- Once all meat sheets are prepared, take each flat sheet and roll it tightly in the parchment paper, securing it into a log shape.
- Preheat your oven to 400°F (200°C). Once preheated, place the tray in the oven and bake the wrapped kebabs for 20-25 minutes until lightly browned.
- After baking, remove the kebabs from the oven and let them rest for about 5 minutes. Unwrap each kebab and slice thinly.
- To serve, take warm pita or tortillas and fill them with the sliced meat. Top with shredded lettuce or cabbage, sliced red onions, and pickles. Drizzle with tahini sauce or tzatziki.
