  • 1 medium Onion Chopped.
  • 2 cloves Garlic Minced.
For the Casserole Base
  • 10 oz Frozen Spinach Thawed and drained.
  • 14.5 oz Diced Tomatoes 1 can.
  • 15 oz Ricotta Cheese Can substitute with cottage cheese.
For the Cheesy Layer
  • 2 cups Shredded Mozzarella Cheese Part-skim is a lighter option.
  • 1/2 cup Grated Parmesan Cheese Optional for topping.
For Flavoring
  • 1 tbsp Italian Seasoning
  • to taste Salt
  • to taste Pepper
For the Crunchy Topping
  • 1 cup Breadcrumbs Can substitute with panko.

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown ground beef over medium heat for 5-7 minutes, breaking it apart until no longer pink.
  3. Stir in chopped onion and minced garlic; sauté for 3-4 minutes until the onion is translucent.
  4. Mix in thawed spinach and diced tomatoes, heating through for about 5 minutes.
  5. Remove from heat and fold in ricotta, mozzarella, Parmesan, Italian seasoning, salt, and pepper until creamy.
  6. Pour the mixture into a sprayed 9x13-inch baking dish, spreading evenly.
  7. Sprinkle breadcrumbs over the top.
  8. Bake for 25-30 minutes or until bubbly and golden brown. Let cool for a few minutes before serving.
