  • 2 tablespoons Olive Oil can substitute with avocado oil
  • 1 large Red Onion diced
  • 1 cup Bell Pepper chopped
  • 1 cup Corn Kernels frozen or canned (drained)
  • 3 cups Cooked Chicken shredded rotisserie chicken
  • 2 cups Chicken Broth low-sodium or vegetable broth
  • 2 tablespoons Chili Powder adjust to taste
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste
  • 2 cups Monterey Jack Cheese shredded
For Serving
  • 1 each Fresh Avocado sliced
  • 1 cup Salsa for garnish
  • 1 serving Simple Salad for freshness

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, combine the dry rice with olive oil, diced red onion, chopped bell pepper, corn kernels, and shredded chicken. Sprinkle in chili powder, garlic powder, cumin, oregano, salt, and pepper. Stir until well incorporated.
  3. Carefully pour the chicken broth over the mixture, ensuring the rice is fully submerged.
  4. Cover the dish tightly with aluminum foil and bake for 50-60 minutes.
  5. Remove the foil and sprinkle a layer of cheese on top. Return to the oven for an additional 5-10 minutes or until the cheese is melted.
  6. Serve warm alongside avocado slices, salsa, or a simple salad.
