  • 1 tsp Ground Cumin Freshly ground preferred.
  • 1 tsp Ground Coriander Freshly ground preferred.
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Black Pepper Adjust based on spice preference.
Garlic Yogurt Sauce Ingredients
  • 1 cup Plain Yogurt Whole or Greek yogurt is best.
  • 1 tbsp Lemon Juice Freshly squeezed for best flavor.

Method
 

Preparation Steps
  1. Finely chop one onion and mince several cloves of garlic. Sauté onion in oil for about 5 minutes until translucent.
  2. In a large bowl, combine ground beef, sautéed onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix gently.
  3. Cover the mixture with plastic wrap and refrigerate for at least 30 minutes.
  4. Shape the mixture into oval patties or logs, about 2 inches long and 1 inch thick.
  5. Preheat your grill or grill pan to medium-high heat, lightly oiling the surface.
  6. Grill the koftas for about 8-10 minutes, turning halfway through for an even cook.
  7. Remove the koftas from heat and let them rest for about 5 minutes.
  8. Make the garlic yogurt sauce by mixing yogurt with the remaining minced garlic and lemon juice. Season with salt.
  9. Serve the koftas alongside the garlic yogurt sauce, garnished with parsley.
