- Bring a large pot of salted water to a rolling boil. Add spaghetti and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1/4 cup of pasta water and drain the spaghetti.
- In a skillet or wok, heat oil over medium-high heat. Add ground beef, breaking it into chunks. Cook until browned, about 5-7 minutes. Drain excess fat.
- Lower the heat and add garlic and ginger to the skillet. Stir and cook for about 1 minute until fragrant.
- Pour in soy sauce, chili oil, brown sugar, and rice vinegar. Stir until sugar dissolves and let simmer for 2-3 minutes.
- Add cooked spaghetti to the skillet and toss gently to coat the pasta in sauce. If dry, add reserved pasta water gradually.
- Turn off heat, drizzle with sesame oil, and mix well. Toss in green onions and sprinkle with sesame seeds if using.
