Step-by-Step Instructions
  1. Begin by heating a large skillet or griddle over medium heat for about 3 minutes.
  2. Spread a thin layer of softened unsalted butter on one side of each slice of sourdough bread.
  3. On the unbuttered sides of two slices, spread about 1 tablespoon of sweet apple butter evenly.
  4. Slice the Brie into thick pieces and layer it evenly over the apple butter on both slices; add thin slices of apple and thyme if using.
  5. Carefully place the remaining slices of bread on top, buttered sides facing outward, and press down gently.
  6. Place the sandwiches into the preheated skillet and cook for about 3-4 minutes until golden brown and crispy.
