Step-by-Step Instructions
  1. Marinate the chicken by coating it in salt, black pepper, paprika, curry powder, thyme, and chopped onion. Allow to rest for 30 minutes.
  2. Brown the chicken in a hot skillet with vegetable oil for 5-7 minutes on each side until cooked through.
  3. Blend tomatoes, red bell pepper, and Scotch bonnet until smooth for the sauce base.
  4. Cook tomato paste in the same skillet for about 2 minutes until it darkens slightly.
  5. Combine the blended sauce with the tomato paste and simmer for 10 minutes until thick.
  6. Add garlic powder, ginger powder, and bouillon cube to the sauce, adjusting salt and spice levels.
  7. Return the chicken to the skillet, cover, and simmer for 25-30 minutes on low heat.
  8. Garnish with parsley or cilantro and serve hot with rice or plantains.
