  • 2 pieces Peaches sliced, fresh or canned
  • 1/4 cup Honey for sweetness
  • 2 tablespoons Apple Cider Vinegar for tang
  • 1/4 cup Water
  • 1 tablespoon Cornstarch to thicken

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt and black pepper on both sides.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from skillet and set aside on a plate.
  6. Add sliced jalapenos and peaches to the skillet and stir for 2-3 minutes until soft.
  7. Whisk together honey, apple cider vinegar, water, and cornstarch in a small bowl.
  8. Pour the honey mixture over softened jalapenos and peaches, and simmer to thicken.
  9. Return the seared chicken to the skillet, spooning sauce over it.
  10. Bake in the preheated oven for 20-25 minutes until chicken reaches 165°F (74°C).
  11. Let the chicken rest for a few minutes before serving.
