For the Bread

For the Filling
  • 1 pcs Avocado Ensure it’s ripe.
  • 1 cup Cheese (Swiss, Cheddar, Provolone) Mix and match as desired.
  • 2 tbsp Mayonnaise Can substitute with Greek yogurt.
  • 1 tsp Dijon Mustard Can be omitted if preferred.
For the Toppings
  • 1/4 cup Red Onion Sliced.
  • 1 pcs Tomato Sliced.
For Grilling
  • 1 tbsp Butter For grilling; olive oil may be used.

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat.
  2. Grill the chicken for 6-7 minutes per side until cooked through and golden brown. Let it rest, then slice.
  3. Prepare toppings: slice avocado, cheese, red onion, and tomato.
Assembly
  1. Spread mayonnaise and Dijon mustard on one side of each slice of bread.
  2. Layer sliced chicken, avocado, cheese, onion, and tomato on one slice, then top with the other slice.
  3. Melt butter in the skillet and grill the sandwich for 3-4 minutes per side until golden and crispy.
  4. Remove, let cool for a minute, then slice and serve.
