- Fill a large pot with water and bring it to a rolling boil over high heat. Add salt to the water.
- Once boiling, add the spaghetti and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally.
- While the pasta cooks, heat olive oil in a skillet over medium heat. Add minced garlic and stir for 2-3 minutes until golden.
- Sprinkle in red pepper flakes to taste. Reserve ½ cup of pasta cooking water, then drain the spaghetti.
- Add the spaghetti to the skillet with garlic oil. Toss to combine.
- Gradually add reserved pasta water, tossing the spaghetti for 2-3 minutes until coated.
- Remove from heat and stir in freshly chopped parsley. Optionally add Parmesan cheese. Toss well.
- Divide among plates, finishing with additional parsley and lemon zest if desired. Serve immediately.
