Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Remove the skin from your salmon and cut it into 1-inch cubes. In a mixing bowl, combine the salmon with teriyaki sauce and kosher salt. Toss until well-coated, letting it meld for 10 minutes.
  2. Press cooked sushi rice firmly into the bottom of a small baking dish. Spread the marinated salmon mixture evenly across the rice. Sprinkle garlic powder and brown sugar over the salmon.
  3. Broil on high for approximately 6 minutes, watching closely for doneness. The salmon should be caramelized and opaque.
  4. Remove from the oven and top with diced avocado, drizzle with spicy mayo, and sprinkle with furikake, crispy fried onion bits, and scallions.
