Preparation
- Pat the beef chuck roast cubes dry with paper towels. Season generously with salt and pepper on all sides.
- In a Dutch oven, heat 2 tablespoons of vegetable oil over medium-high heat. Sear the seasoned beef cubes for 4-5 minutes on each side until browned.
- Remove the beef and set aside. Lower the heat to medium, add one chopped yellow onion, and sauté for 5-7 minutes.
- Add 3 minced garlic cloves and 1 tablespoon of freshly grated ginger, cooking for an additional minute.
- Return the beef to the pot. Pour in 1/4 cup of low-sodium soy sauce, 1 cup of beef broth, 1/4 cup of brown sugar, and 2 tablespoons of rice vinegar.
- Stir to combine and bring to a gentle simmer. Cover and braise for 2-3 hours.
- Whisk together 2 tablespoons of cornstarch with 1/4 cup of cold water. Pour this slurry into the pot while stirring.
- Simmer uncovered for about 5-10 minutes, until the glaze thickens.
- Remove from heat and let rest. Serve garnished with green onions or sesame seeds.
