Step-by-Step Instructions for Miso Mushroom Crispy Rice
- In a large bowl, combine your cooked sushi rice with rice vinegar and a pinch of salt, mixing gently. Spread the rice into an even layer about 1-inch thick on a baking sheet or plate. Cover and chill in the refrigerator for at least 15 minutes.
- After chilling, remove the rice and cut it into squares or rectangles. Heat vegetable oil in a non-stick skillet over medium heat. Carefully place the rice pieces in the skillet and fry for about 3-4 minutes on each side until golden brown and crispy.
- In the same skillet, add extra vegetable oil if needed and introduce sliced cremini mushrooms. Sauté over medium heat for 5-7 minutes until tender and browned.
- Stir in white miso paste, soy sauce, and sesame oil. Cook for an additional 1-2 minutes until well combined and slightly thickened.
- Transfer crispy rice pieces to plates and top with sautéed miso mushrooms. Garnish with chopped green onions and toasted sesame seeds. Serve immediately.

Notes
Use a high-quality non-stick skillet to prevent sticking. Reheat leftovers in a dry skillet to maintain crispiness.
