Step-by-Step Instructions for Miso Mushroom Crispy Rice
  1. In a large bowl, combine your cooked sushi rice with rice vinegar and a pinch of salt, mixing gently. Spread the rice into an even layer about 1-inch thick on a baking sheet or plate. Cover and chill in the refrigerator for at least 15 minutes.
  2. After chilling, remove the rice and cut it into squares or rectangles. Heat vegetable oil in a non-stick skillet over medium heat. Carefully place the rice pieces in the skillet and fry for about 3-4 minutes on each side until golden brown and crispy.
  3. In the same skillet, add extra vegetable oil if needed and introduce sliced cremini mushrooms. Sauté over medium heat for 5-7 minutes until tender and browned.
  4. Stir in white miso paste, soy sauce, and sesame oil. Cook for an additional 1-2 minutes until well combined and slightly thickened.
  5. Transfer crispy rice pieces to plates and top with sautéed miso mushrooms. Garnish with chopped green onions and toasted sesame seeds. Serve immediately.
