  • 2 cloves Garlic Fresh minced garlic is recommended for the best taste.

  • 1/4 cup Olive Oil Can be swapped with any neutral oil for grilling.

  • 1/4 teaspoon Pepper Replace with cayenne for an extra spicy kick if desired.

Equipment

  • Grill
  • Mixing bowl
  • Zip-top bag
  • Meat Thermometer

Method

Step-by-Step Instructions
  1. Whisk together mayonnaise, vinegar, mustard, sugar, minced garlic, and horseradish in a mixing bowl. Reserve about one cup for basting.
  2. Place chicken breasts in a zip-top bag, pour remaining sauce, seal, and marinate in the refrigerator for at least four hours.
  3. Preheat your grill to a high temperature of about 450°F. Rinse marinated chicken under cold water and pat dry.
  4. Mix salt and pepper together, drizzle olive oil over dried chicken breasts, and rub in evenly.
  5. Place marinated chicken on the grill skin-side down for 2-3 minutes without moving, then flip and grill for another 2 minutes.
  6. Shift chicken to indirect heat, skin-side up, lower grill temperature to 425°F, and baste generously with reserved sauce. Cook for about 5 minutes and repeat basting two more times.
  7. Grill for an estimated total of 30 minutes or until internal temperature reaches 160-162°F. Verify with a meat thermometer.
  8. Remove chicken from the grill, let it rest for 5 minutes, and serve with additional sauce on the side.
