Step-by-Step Instructions
  1. Rinse the lemons under cool water and slice them thinly, removing seeds.
  2. Combine sliced lemons and water in a large saucepan, bring to a boil, then simmer uncovered for 30 minutes.
  3. Stir in the granulated sugar gradually until dissolved and cook for an additional 5-7 minutes.
  4. Add pectin if desired and simmer for another 10-15 minutes until the jam coats the back of a spoon.
  5. Pour the warm jam into sterilized jars, fill to about 1/2 inch from the top, and seal tightly.
  6. Allow jars to cool completely at room temperature, then refrigerate or store at room temperature.
