Step-by-Step Instructions for Easy Lamb Roast
- Remove the lamb roast from packaging and let it rest at room temperature for about 1 hour. Preheat the oven to 400°F (200°C).
- Pat the lamb leg dry with paper towels and make 1-inch deep holes in the top, along with shallow slices on the bottom.
- Drizzle olive oil on both sides of the lamb and insert sliced garlic into the holes.
- Season with kosher salt and black pepper, then sprinkle rosemary and sage all over.
- Place the lamb in a roasting pan, fat side down, and roast in the preheated oven for 20 minutes.
- After 20 minutes, reduce the oven temperature to 350°F (175°C) and roast for an additional 1.5 to 2.25 hours.
