Step-by-Step Instructions for Easy Lamb Roast
  1. Remove the lamb roast from packaging and let it rest at room temperature for about 1 hour. Preheat the oven to 400°F (200°C).
  2. Pat the lamb leg dry with paper towels and make 1-inch deep holes in the top, along with shallow slices on the bottom.
  3. Drizzle olive oil on both sides of the lamb and insert sliced garlic into the holes.
  4. Season with kosher salt and black pepper, then sprinkle rosemary and sage all over.
  5. Place the lamb in a roasting pan, fat side down, and roast in the preheated oven for 20 minutes.
  6. After 20 minutes, reduce the oven temperature to 350°F (175°C) and roast for an additional 1.5 to 2.25 hours.
  7. Remove the lamb from the oven, cover loosely with foil, and let it rest for at least 15 minutes.
