Ingredients
  

For the Filling
  • 8 pieces Flour Tortillas Swap with corn tortillas for gluten-free.
  • 8 oz Cream Cheese Ensure it’s softened.
  • 4 oz Diced Green Chilies Diced jalapeños for more heat.
  • 1 cup Cheddar Cheese Opt for sharp cheddar.
  • 1 medium Red Onion Shallots can be a sweet alternative.
  • 1 medium Bell Pepper Any variety or fresh chilies.
  • 1/2 cup Sour Cream Greek yogurt can lighten it up.
For the Seasoning
  • 1 tsp Paprika Smoked paprika for added depth.
  • 1 tsp Garlic Powder Fresh garlic for a stronger punch.
  • 1 tsp Onion Powder Skip if using fresh onion.
  • 1/4 tsp Cayenne Reduce or omit for milder bites.
For the Dipping Sauce
  • 1/2 cup Basil Pesto Homemade or store-bought.

Method
 

  1. Preheat your oven to 350ºF (175ºC) and line a baking sheet with parchment paper.
  2. In a large bowl, mix cream cheese, diced green chilies, cheddar cheese, red onion, bell pepper, sour cream, paprika, garlic powder, onion powder, and cayenne until smooth.
  3. Spread the filling on flour tortillas, roll them up tightly, and cut into five pieces.
  4. Place the sliced antojitos cut-side up on the lined baking sheet.
  5. Bake in the preheated oven for 8 minutes, then broil for an additional 5 minutes until golden.
  6. Let cool slightly and serve warm with basil pesto for dipping.
