Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) for even cooking.
  2. In a large bowl, combine grated ginger, chopped green chilies, cumin seeds, turmeric, red pepper flakes, and salt. Add peanut or sesame oil and mix well.
  3. Add shredded cabbage and carrots to the bowl and toss until well coated.
  4. Spread the mixture onto a lined baking sheet in a single layer. Roast in the oven for 20 to 25 minutes, stirring halfway through.
  5. Remove from oven and mix in fresh grated coconut, chopped cilantro, and lemon juice.
  6. Transfer to a serving dish and top with crushed peanuts or sesame seeds if desired.
