Method
 

Dough Preparation
  1. Combine lukewarm water, yeast, salt, and sugar in a mixing bowl. Stir gently and let it rest for 1-2 minutes.
  2. Gradually mix in bread flour, stirring until a rough dough forms, then knead for 4-5 minutes until smooth.
Resting Dough
  1. Shape the dough into a ball, place in an oiled bowl, cover, and let it rest for 15-20 minutes.
Baking Soda Bath
  1. In a pot, boil 10 cups of water and stir in baking soda to create an alkaline solution.
Shape Pretzels
  1. Punch down the dough and divide into 8 pieces. Roll each into a 24-inch rope and shape into pretzels.
Bathing Pretzels
  1. Lower pretzels into the boiling baking soda bath, soaking for 30 seconds each before placing on a baking sheet.
Baking
  1. Preheat oven to 450°F. Whisk egg yolk with water, brush on pretzels, and sprinkle with salt. Bake for 12-14 minutes.
Cooling
  1. Transfer pretzels to a wire rack to cool for a few minutes before serving.
