- Thinly slice the flank steak or sirloin against the grain. Season with salt and pepper. Set aside.
- Bring a large pot of water to boil. Add rice noodles and cook according to package instructions (4-6 minutes). Drain and rinse under cold water.
- Heat 1 tablespoon of oil in a skillet over medium-high heat. Stir-fry the seasoned beef for about 3-4 minutes until browned. Remove from pan.
- In the same pan, add another tablespoon of oil and stir-fry the bell peppers and snap peas for 3-4 minutes until tender.
- Return cooked beef to the skillet. Add drained noodles and hoisin sauce. Stir and cook for another 2-3 minutes.
- Serve Hoisin Beef Noodles in bowls. Top with a fried egg and garnish with green onions and sesame seeds.
