- In a medium pot, pour 4 cups of vegetable broth or water and bring to a gentle simmer over medium heat.
- Once simmering, add around 2 tablespoons of finely grated fresh ginger, and if desired, toss in 1-2 cloves of minced garlic. Let the mixture simmer for about 5 minutes.
- Reduce heat to low and add 2-3 tablespoons of miso paste to the pot. Stir well until it fully dissolves.
- Just before serving, squeeze the juice of one fresh lemon into the pot, stirring gently to combine.
- Carefully ladle the warm broth into soup mugs, optionally garnish with freshly chopped herbs.
