  2. Sauté onion, garlic, turmeric, and red pepper flakes in olive oil until the onion is translucent.
  3. Add carrots, mushrooms, and coriander; cook until softened.
  4. Pour in vegetable broth and add quinoa; bring to a boil, then simmer covered until quinoa is tender.
  5. Add kale and remaining garlic; stir and let sit until kale wilts.
