Step-by-Step Instructions
  1. In a small bowl, combine 1¼ cups of warm water with 2¼ teaspoons of quick-rise yeast. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, whisk together 3 cups of flour and 1 teaspoon of salt. Add the activated yeast mixture and 2 tablespoons of olive oil, mixing until a shaggy dough forms. Knead for about 10 minutes until smooth and elastic. Cover and let rise for 1 hour.
  3. Preheat your pizza stone under the broiler on high for about 30 minutes, then reduce the oven temperature to 375°F.
  4. Wash and slice cherry tomatoes, chop artichoke hearts, season with olive oil, salt, and pepper, then spread on the hot pizza stone and roast for 10-15 minutes.
  5. Combine 1 cup of plain Greek yogurt, 2 tablespoons of chopped dill, lemon juice, and minced garlic in a mixing bowl. Stir well and season with salt. Chill in the refrigerator.
  6. After the dough has risen, punch it down gently and let it rest for an additional 10-30 minutes. Roll out the dough to about a 12-inch round.
  7. Brush the rolled-out dough with Greek marinade. Spread a generous amount of tzatziki over the base, and layer with roasted veggies, chopped gyro meat, sliced red onion, bell peppers, and feta.
  8. Transfer the assembled Gyro Pizza to the hot pizza stone and bake at 375°F for 10-15 minutes. Broil for an additional 5-10 minutes until edges are browned.
