- In a small bowl, combine 1¼ cups of warm water with 2¼ teaspoons of quick-rise yeast. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, whisk together 3 cups of flour and 1 teaspoon of salt. Add the activated yeast mixture and 2 tablespoons of olive oil, mixing until a shaggy dough forms. Knead for about 10 minutes until smooth and elastic. Cover and let rise for 1 hour.
- Preheat your pizza stone under the broiler on high for about 30 minutes, then reduce the oven temperature to 375°F.
- Wash and slice cherry tomatoes, chop artichoke hearts, season with olive oil, salt, and pepper, then spread on the hot pizza stone and roast for 10-15 minutes.
- Combine 1 cup of plain Greek yogurt, 2 tablespoons of chopped dill, lemon juice, and minced garlic in a mixing bowl. Stir well and season with salt. Chill in the refrigerator.
- After the dough has risen, punch it down gently and let it rest for an additional 10-30 minutes. Roll out the dough to about a 12-inch round.
- Brush the rolled-out dough with Greek marinade. Spread a generous amount of tzatziki over the base, and layer with roasted veggies, chopped gyro meat, sliced red onion, bell peppers, and feta.
- Transfer the assembled Gyro Pizza to the hot pizza stone and bake at 375°F for 10-15 minutes. Broil for an additional 5-10 minutes until edges are browned.
