Step-by-Step Instructions
  1. Crumble 8 ounces of block feta cheese into smaller pieces and place them into your food processor.
  2. Add 1/4 cup of olive oil, 2 cloves of minced garlic, 2 tablespoons of fresh lemon juice, and 1 teaspoon of lemon zest to the food processor with the crumbled feta. Blend on medium speed for about 30 seconds, or until the mixture starts to come together into a smooth paste.
  3. Continue blending for an additional 30 seconds to 1 minute, stopping occasionally to scrape down the sides until you reach a creamy consistency. Add extra olive oil if too thick.
  4. Incorporate 1 cup of fresh parsley, 1/2 cup of fresh basil, 1/4 cup of fresh mint, and 2-3 chopped green onions. Pulse several times to combine.
  5. Taste the dip and season with salt and black pepper. Blend once more until mixed.
  6. Transfer the dip to an airtight container and refrigerate for at least 30 minutes to enhance flavors, though it can be served immediately.
