Ingredients

  • 4 cloves Garlic Minced.
  • 1 medium Onion Finely chopped.
  • 1 cup Breadcrumbs Use gluten-free if needed.
  • 1 tsp Baking Soda To keep meatballs tender.
  • 1/4 cup Fresh Herbs (Parsley, Mint, Coriander) Adjust to taste.
  • 2 tbsp Olive Oil Extra virgin.

For the Roasted Potatoes
  • 2 lbs Potatoes Cut into wedges.
  • 1 tbsp Cumin Adjust to preference.
  • 1 tbsp Paprika Adjust to preference.
  • 1 tbsp Oregano Adjust to preference.
For the Tzatziki
  • 1 cup Greek Yogurt Greek-style for best texture.
  • 1 medium Cucumber Grated.
  • 2 tbsp Lemon Juice Fresh.
  • to taste Dill or Mint Either works well.
For the Salad
  • 1 cup Lettuce Chopped.
  • 1 cup Tomatoes Chopped.
  • 1 cup Cucumbers Chopped.
  • 1/2 cup Red Onion Sliced.
  • 1/2 cup Kalamata Olives Pitted.

Method
 

Meatball Preparation
  1. Combine ground beef, minced garlic, and chopped onion in a mixing bowl. Add breadcrumbs, baking soda, herbs, olive oil, salt, and pepper. Mix thoroughly and refrigerate for at least 2 hours.
  2. Preheat your oven to 425°F (220°C). Roll chilled meat mixture into 1-inch meatballs and arrange on a baking sheet. Bake for 30-40 minutes until golden brown.
Roasted Potatoes
  1. Wash and cut potatoes into wedges. Toss with olive oil, salt, cumin, paprika, and oregano. Spread on a baking sheet and roast for 40-60 minutes.
Tzatziki Preparation
  1. Combine Greek yogurt, grated cucumber, lemon juice, and dill or mint in a bowl. Stir well and season with salt. Refrigerate until serving.
Assemble the Bowl
  1. Start with a layer of lettuce, followed by Greek salad mix, crispy roasted potatoes, and baked meatballs. Drizzle with tzatziki.
