  • 1 cup Cheddar Cheese shredded, or vegan cheese
  • 1 cup Monterey Jack Cheese shredded
For Topping
  • 1 cup Additional Cheddar Cheese for topping

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and set out a baking dish.
  2. In a food processor, blend rinsed pinto beans with chicken stock until smooth.
  3. In a skillet, heat olive oil and sauté onion and garlic until translucent.
  4. Add bean puree to skillet, stir in cheddar and Monterey Jack cheese until combined.
  5. Transfer mixture to baking dish, top with additional cheese, and bake for 10 minutes.
  6. Allow to cool for a few minutes, then serve warm with tortilla chips or as a burrito filling.
