- Preheat your oven to 425°F (220°C). Gather all your ingredients and equipment.
- Cut the cauliflower into bite-sized florets, about 1–2 inches in size.
- In a mixing bowl, toss the cauliflower with cornstarch until coated.
- Spread the coated cauliflower on a parchment-lined baking sheet. Drizzle with vegetable oil. Bake for 25-30 minutes.
- While the cauliflower is baking, combine soy sauce, honey (or maple syrup), rice vinegar, minced garlic, ginger, and sesame oil in a saucepan over medium heat. Simmer for 5–7 minutes.
- Once baked, transfer cauliflower to the saucepan and toss in the sauce until coated.
- Spoon cauliflower into bowls and garnish with green onions and sesame seeds.
