Method
 

Step‑by‑Step Instructions
  1. Peel and cut the plantains into 1–2 inch pieces. Cook in salted boiling water for 10–15 minutes until tender.
  2. Drain the plantains and let cool. Mash in a mortar with minced garlic, olive oil or butter, and pork cracklings until slightly chunky.
  3. In a skillet, melt butter or olive oil and sauté minced garlic until fragrant. Add shrimp, season, and cook until pink.
  4. Mold mofongo as a base on plates and top with garlic shrimp. Drizzle pan juices over the dish.
  5. Garnish with cilantro or lime wedges and serve immediately.
