Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lightly spraying it with olive oil.
  2. Combine the diced butternut squash with olive oil, butter, honey, and salt in a large bowl. Spread on the baking sheet and roast for 18-20 minutes until tender.
  3. Heat a skillet over medium heat, add olive oil, butter, red pepper flakes, and minced garlic. Sauté for about 30 seconds until fragrant.
  4. Add large shrimp in batches, cooking for about 2 minutes on each side until opaque and pink. Transfer to a paper towel-lined plate.
  5. Assemble the bites by sliding a shrimp onto a bamboo pick followed by a piece of roasted butternut squash. Continue until all ingredients are used.
  6. Arrange skewers on a serving platter, sprinkle fresh oregano over the bites, and add lemon wedges on the side.
