Preparation Steps
  1. Start by washing and chopping the broccoli into bite-sized pieces.
  2. Gather your garlic cloves, crushing them slightly.
  3. Measure out your chicken stock and water.
Cooking Steps
  1. In a large pot over medium heat, combine the broccoli, chicken stock, water, smashed garlic, and a pinch of kosher salt and black pepper.
  2. Bring to a boil, then lower the heat to simmer for 30 minutes.
  3. Blend the soup until desired consistency, leaving some chunky pieces.
  4. Stir in orzo or ditalini pasta and cook for about 15 minutes.
  5. Once the pasta is tender, season with nutmeg, salt, and pepper.
  6. Serve hot, topped with parmesan cheese and a drizzle of olive oil.
