  • 1 cup Pea Shoots Omit if not available.
  • 1/2 cup Grated Parmesan Cheese Substitute with nutritional yeast for dairy-free.
  • 2 tablespoons Olive Oil Extra virgin recommended.
  • 1 tablespoon Lemon Juice Use fresh for best results.
  • 1 clove Garlic Consider using roasted garlic for mild flavor.
  • to taste Black Pepper Freshly cracked is preferable.
Toasted Bread
  • 1 loaf Ciabatta Bread French or rustic loaves are alternatives.
  • 1 teaspoon Lemon Zest Optional but recommended.

Method
 

Preparation Steps
  1. In a food processor, combine thawed peas, optional pea shoots, grated parmesan, olive oil, fresh lemon juice, minced garlic, and a pinch of salt and pepper. Blend until a rough paste forms.
  2. Preheat your broiler or grill to medium-high. Place slices of ciabatta on a baking sheet and drizzle with olive oil. Toast under the broiler for 2-3 minutes on each side.
  3. Remove ciabatta slices and rub the top surface with a cut garlic clove.
  4. Spread a generous layer of the pea topping over each toast, sprinkle with additional grated parmesan and lemon zest, and add pea shoots if available.
  5. Drizzle with extra virgin olive oil and sprinkle with black pepper before serving.
