- In a food processor, combine thawed peas, optional pea shoots, grated parmesan, olive oil, fresh lemon juice, minced garlic, and a pinch of salt and pepper. Blend until a rough paste forms.
- Preheat your broiler or grill to medium-high. Place slices of ciabatta on a baking sheet and drizzle with olive oil. Toast under the broiler for 2-3 minutes on each side.
- Remove ciabatta slices and rub the top surface with a cut garlic clove.
- Spread a generous layer of the pea topping over each toast, sprinkle with additional grated parmesan and lemon zest, and add pea shoots if available.
