Ingredients

For the Marinade
  • 1 lb Flank Steak A lean, flavorful cut that absorbs the marinade beautifully.
  • 1/4 cup Lime Juice Bottled lime juice can be used if fresh isn’t available.
  • 2 tbsp Chili Powder Infuses the marinade with characteristic heat; adjust to preference.
  • 1 tsp Garlic Powder Enhances depth; fresh garlic can also be used.
  • 1 tsp Onion Powder Complements the savory notes of the marinade.
  • 1 tsp Salt Essential for bringing all the flavors together.
  • 1/2 tsp Pepper Adds a spicy kick to the mix.
For the Avocado Salsa
  • 2 medium Avocado Provides creaminess and richness; can substitute with mango.
  • 1 medium Jalapeño Gives the salsa a spicy punch; omit for less heat.
  • 1/4 cup Cilantro Adds a fresh herbal note; optional based on taste.

Equipment

  • Grill
  • Mixing bowl
  • Resealable Bag
  • Instant-Read Thermometer
  • cutting board

Method

Instructions
  1. In a mixing bowl, whisk together lime juice, chili powder, garlic powder, onion powder, salt, and pepper to create a vibrant marinade. Place flank steak in a resealable bag, pour marinade over it, and seal tightly. Allow it to marinate in the refrigerator for at least 2 hours, up to 8 hours for deeper flavor.
  2. Dice the avocado into bite-sized pieces, place them in a mixing bowl, and finely chop the jalapeño and cilantro, adding them to the bowl. Gently mix the ingredients together and set aside for flavors to meld.
  3. Preheat your grill to medium-high heat, around 400°F. Remove the marinated flank steak from the bag and place it on the grill. Cook for approximately 6-8 minutes per side, checking for doneness at 135°F for medium-rare.
  4. Let the steak rest on a cutting board for about 5 minutes after grilling to allow juices to redistribute.
  5. Slice the rested flank steak against the grain into thin strips, serving warm with the fresh avocado salsa.
