  • 2 tablespoons Tomato Paste or crushed tomatoes
  • 2 cups Monterey Jack Cheese or Cheddar cheese
For Serving
  • 1/4 cup Fresh Cilantro for garnish
  • 1/4 cup Green Onions chopped for garnishing
  • 1 cup Salsa for dipping
  • 1 medium Avocado sliced

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prepare your baking dish.
  2. In a large baking dish, mix together the onion, red bell pepper, brown rice, fajita seasoning, and cayenne pepper.
  3. In a separate bowl, whisk together chicken broth, green chiles, tomato paste, and olive oil. Pour over the rice mixture.
  4. Stir in the shredded chicken, black beans, and corn until evenly distributed.
  5. Cover with foil and bake for 65-70 minutes, until the liquid is absorbed and rice is tender.
