Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Drizzle olive oil over the flatbreads for an even coating.
  3. Mix shredded chicken with BBQ sauce in a bowl, reserving some sauce for later.
  4. Spread the sauced chicken evenly over each flatbread, then cover with mozzarella cheese.
  5. Scatter red onion (or bell peppers) over the cheese.
  6. Bake in preheated oven for 12-15 minutes, until bubbly and golden.
  7. Let cool for a few minutes, then drizzle with additional BBQ sauce and sprinkle with cilantro.
  8. Slice and serve warm.
