- Combine the whipped topping and dry instant vanilla pudding mix in a large mixing bowl. Fold together until smooth and creamy, about 2-3 minutes.
- Fold in the drained crushed pineapple and mandarin oranges until evenly distributed, about another 2-3 minutes.
- Introduce the pastel mini marshmallows and, if desired, the shredded coconut, folding gently to incorporate, about 2 minutes.
- If desired, sprinkle in the chopped pecans or walnuts, folding them into the mixture quickly and evenly, about 1-2 minutes.
- Transfer to a serving bowl and refrigerate for at least 1 hour to allow flavors to meld.
- Once chilled, sprinkle sweetened flaked coconut and decorate with pastel sprinkles or Easter M&M's before serving.
