- Preheat your oven to 400°F (200°C).
- Toss 4 cups of shredded zucchini with 1/2 teaspoon of salt and let it rest for about 10 minutes.
- Drain the zucchini using a kitchen towel to extract excess moisture.
- Mix the drained zucchini with 2 large eggs, 0.5 cup Parmesan cheese, and half of the mozzarella cheese.
- Grease a 9x13-inch baking dish. Press the zucchini mixture into the dish to form a crust.
- Bake the crust for about 20 minutes, or until lightly browned.
- In a skillet, brown 1 pound of ground beef and 0.5 cup of chopped onion for 6-8 minutes.
- Stir in 2 cups of pizza sauce, 1 chopped green bell pepper, 0.5 cup mushrooms, 0.5 teaspoon oregano, 0.5 teaspoon garlic powder, and 0.25 teaspoon black pepper. Simmer for 5 minutes.
- Spread the beef and vegetable mixture evenly over the baked crust.
- Sprinkle remaining mozzarella and 1 cup cheddar cheese over the beef mixture.
- Bake for an additional 20 minutes, until cheese is melted and bubbly.
- Let cool for a few minutes before slicing and serving.
